Ingredients

For the dough

8 fl. oz. warm water

1 sachet fast action dried yeast

1 tsp. sugar

1 tsp salt

14 oz. white bread flour, plus extra

2 tbsp. olive oil, plus extra

For the sauce

8 fl. oz. passata

½ tsp. dried basil

½ tsp. oregano

1 garlic clove, finely minced

Salt and pepper, to taste

For the toppings

10 oz. grated mozzarella

Pepperoni or a mixture of your favourite toppings

Method
  1. Start by making the dough. Add the sugar and yeast to the warm water. Stir gently, cover and set aside for 8 minutes or until it turns frothy.
  2. Add the salt and half of the flour to a large bowl or in the bowl of a stand mixer attached with a dough hook. Add the yeast mixture and olive oil then bring the ingredients together. Add more flour a little at a time if necessary until you start to get a slightly sticky dough.
  3. Knead for 15 minutes on a lightly floured surface or use the stand mixer on a medium speed for 10 minutes. The dough should be smooth and elastic.
  4. Lightly grease a large bowl with some olive oil. Place the dough in the bowl and then lightly brush some olive oil on top. Cover with clingfilm and leave to rise for one hour in a warm place.
  5. In the meantime, make the sauce. Add the passata to a small saucepan followed by the rest of the ingredients. Place over a low-medium heat and stir frequently for 8 minutes. Remove from the heat, cover and set aside to cool.
  6. Once risen, remove the dough from the bowl and roll it out onto a floured surface into a 15”x11” rectangle.
  7. Evenly spread the tomato sauce all over. Next sprinkle the cheese all over then your favourite toppings. Be careful not to over do it as it may not roll properly.
  8. Starting from one of the long sides of the dough, tightly roll it. Cut into 8 even slices.
  9. Line a large baking sheet with baking paper. Next, place one of the rolls in the centre then arrange the other rolls evenly around the centre roll spacing them at least 1/2 inch apart.
  10. Cover with clingfilm and put them back into a warm spot to rise for 30 minutes. In the meantime, preheat the oven to 180º Celsius.
  11. Bake in the centre of the oven for 15-20 minutes or until it forms a golden crust.
  12. Leave to cool on a wired rack for about 5-10 minutes. Serve warm or at room temperature. Enjoy!
