French Crêpes

This may sound controversial, but French crêpes are THE best kind of pancakes. As much as I love the American-style pancakes, crêpes are more nostalgic for me as my dad used to make them so often and I’d drown it in cinnamon sugar!

These days I like to add fresh berries, a sprinkle of icing sugar and a drizzle of maple syrup.

Have a go at making this super easy recipe for the ultimate fluffy, melt-in-the mouth crêpes perfect for pancake day, brunch or even breakfast.

Ingredients

6 fl. oz semi-skimmed milk, plus 1 tbsp.
2 oz. unsalted butter melted, blue extra butter for cooking
1 tsp. vanilla extract
3 oz caster sugar
2 eggs
6 oz. self raising flour, sifted

Method
  1. In a mixing bowl, combine the milk and butter and vanilla extract, then mix in the sugar.
  2. Next add in the eggs and half the flour. Mix on a medium-high well until fully combined scraping the bottom and the sides well.
  3. Add the remaining flour and whisk on a high speed until the mixture just starts to become frothy and bubbly.
  4. Cover with cling film and and set aside for 15 minutes or 30 minutes for optimal fluffiness!
  5. Whisk the batter gently with a hand whisk and add the 1 tbsp. milk and whisk again.
  6. Place a medium-sized shallow pan over a medium heat heat, and lightly brush with butter. Pour in roughly 2 fl. oz. batter and live the pan in a circular motion to spread it out. Cook on both side for about 20-30 secs. Repeat for the rest of the batter.
  7. Serve warm with you favourite toppings and enjoy!
