Whether you’re looking for a festive centre-piece for the holidays or simply want a fun bake, this recipe will certainly bring the wow factor. This Swedish-inspired bake uses a vegan dough recipe that incorporates a Tangzhong base which produces crisp exterior and a soft and chewy interior.

The Tangzhong method, which I learned from Erin on her Cloudy Kitchen blog, is a Japanese technique. It usually involves cooking flour and water in a bread recipe to form a thick paste, or a roux. The process of making the Tangzhong gelatinises some of the starch in the flour. This means the flour is able to absorb a lot more water, and also holds onto it throughout the dough making process.
As this recipe is not an enriched dough (which uses eggs, milk and butter), the Tangzhong works to gelatinise some of the starch in the flour which also helps the baked dough to stay soft for an extended period.

Creative Tips!
You can easily swap the cinnamon sugar with chocolate spread or Nutella.
If you want to add additional flavours, add some ground ginger and cloves in the cinnamon sugar part of this recipe for a spicy kick.
For the Tangzhong
1 oz. strong white bread flour
3 fl. oz. oat milk
For the dough
¼ pt. oat milk, cold
1 oz. light muscovado sugar (or soft light brown sugar)
1 ½ tsp. instant yeast
10-11 oz. strong white bread flour, plus extra
1 tsp. vanilla extract
½ tsp. salt
¼ tsp. ground cinnamon
2 tbsp. vegetable oil, plus extra
For the filling
1 ½ oz. vegan butter, softened
4 oz. light muscovado sugar (or soft light brown sugar)
1 oz. granulated sugar
2 tbsp. ground cinnamon
1 oz. butter
1 ½ tbsp. strong white bread flour
For the glaze
3 oz. icing sugar
1 tbsp. water
(Alternatively, use a bit of icing sugar to lightly dust on top)
