Mexican Salsa

Ingredients

4 ripe tomatoes

1 jalapeño pepper

2 garlic cloves

1/2 red onion

Handful fresh coriander, finely chopped

Salt to taste

Method
  1. Preheat the oven to 180º Celsius and line a baking tray with foil.
  2. Place a griddle pan over a medium heat, then add the tomatoes, jalapeño pepper, garlic cloves and 1/4 of the onion on top. Cook until they start to char, rotating occasionally to ensure even charring.
  3. Next, remove the garlic and place into a food blender then transfer the tomatoes, jalapeño pepper and onion in the baking tray and bake in the oven for 15-20 minutes or until the tomatoes have softened.
  4. Once softened, place the ingredients into the same food processor with the garlic. Blend until a pulp but be careful not to over blend. Pour the mixture into a bowl.
  5. Finely chopped the remaining quarter of onion then mix it in along with the fresh coriander. Add salt to taste. Serve with your favourite Mexican dishes.
