This may sound controversial, but French crêpes are THE best kind of pancakes. As much as I love the American-style pancakes, crêpes are more nostalgic for me as my dad used to make them so often and I’d drown it in cinnamon sugar!
These days I like to add fresh berries, a sprinkle of icing sugar and a drizzle of maple syrup.
Have a go at making this super easy recipe for the ultimate fluffy, melt-in-the mouth crêpes perfect for pancake day, brunch or even breakfast.
6 fl. oz semi-skimmed milk, plus 1 tbsp.
2 oz. unsalted butter melted, blue extra butter for cooking
1 tsp. vanilla extract
3 oz caster sugar
2 eggs
6 oz. self raising flour, sifted
