Vegetarian Spaghetti Bolognese

If you’re ever in need for a quick, meat-free meal that’s also a well-known comfort food, have a go at making my vegetarian spag bowl made with Quorn mince.

Ney's Tip

You can make the sauce hours in advance and then reheat over the stove before serving. This is also a great way to let the Quorn mince develop more flavour whilst resting in the sauce.

Ingredients

For the sauce

2 tbsp. olive oil
½ onion, chopped
1 ½ tsp. salt
3 garlic cloves, finely chopped
2 cans chopped tomatoes
2 fl. oz. water
1 tbsp. tomato purée
1 tbsp. dried basil
1 tsp. dried oregano
½ tsp. black pepper
12 oz. Quorn mince

To serve

1 Ib. 4 oz. (dry weight) spaghetti
Freshly chopped basil, optional

Method

  1. Heat the oil in a medium-sized pot over a medium heat. Add the onions and fry for 3 minutes. Add the salt and continue to stir for a further 3 minutes.
  2. Stir in the garlic for 1 minute, then mix in 1 can of tomatoes, water, purée, basil, oregano and pepper. Reduce the heat to a simmer and cook with the lid on for 8 minutes. 
  3. Remove the sauce from the heat and then carefully pour into a food processor. Cover the with the lid and blend on a high speed for 1 minute or until the sauce becomes smooth.
  4. Add the sauce back into the pot and place over a low-medium heat. Stir in the Quorn mince and the 2nd can of chopped tomatoes. Reduce the heat, and simmer for 8 minutes.
  5. In the meantime, boil the spaghetti according to instructions. Once cooked, drain and serve with the bolognese sauce garnished with freshly chopped basil. Enjoy!
