Flapjacks

I used to regularly buy flapjacks with a cup of coffee from Costa before heading to my morning lectures at university – I considered them the breakfast of champions!

If you want to be a bit more creative with your flapjacks,  omit about 2-4 oz. of the oats and mix in dried fruits, nuts and maybe even some chocolate chips.

Ingredients

6 oz. soft light brown sugar

6 oz.  unsalted butter, cut into cubes

4 oz. golden syrup (or honey)

12 oz. rolled oats

Method
  1. Preheat the oven to 150º Celsius and line a 7 x 11 inch baking tray with baking paper ensuring the sides hang slightly over.
  2. Place a medium sauce pan over a low heat. Add the sugar, butter and golden syrup. Melt whilst stirring frequently. Once the butter has melted, remove from the heat then stir in the oats until fully combined.
  3. Tip the mixture in to the baking tray and level out using the back of a spoon, ensuring to pack the mixture as tightly as possible.
  4. Bake in the centre of the oven for 25-30 minutes or until golden on top. Don't worry if it doesn't look quite set as it will firm up whilst cooling.
  5. Remove from the oven and leave to cool slightly for 5 minutes. Use the baking paper to lift the flapjack from the baking tray, then cut into bars. Enjoy!
